Allspice

Allspice comes from the dried, unripe berries of Pimenta dioica, an evergreen tree native to the West Indies, Mexico, and Central America. The berries are harvested while still green, then sun-dried until they turn deep brown and aromatic. Ground or whole, allspice has been cherished for centuries in both cooking and traditional herbal practices.
Its fragrance is what makes it so special—a warm, sweet, spicy blend often described as a harmony of cinnamon, clove, nutmeg, and black pepper. This uniquely layered scent comes largely from eugenol, the same compound found in cloves, which gives allspice its uplifting, slightly woody, and comforting character.
