Juniper Berry essential oil, Juniperas communis, is steam distilled from the crushed dried berries of an evergreen shrub that grows in many parts of the world, including North America. The "berries" are not actually berries – they are tiny little seed cones.
These berries have a tart, pine-like flavor and have long been used as a spice. They are also famously known as the botanical that gives gin its signature character. In fact, juniper must legally be the dominant flavor for a spirit to be called gin, providing its essential aromatic and flavor profile that distinguishes it from all other spirits.
Historically, juniper has been valued for its purifying qualities. It was burned in French hospitals to cleanse the air and used by Native American cultures in ceremonial purification. Its warm, smoky, peppery aroma continues to be cherished for both its grounding energy and its cleansing nature.
