Cocoa Powder comes from cocoa beans—the seeds of the cacao tree (Theobroma cacao), grown in equatorial regions around the world. When cocoa beans are pressed to remove most of the cocoa butter, the remaining solids are dried and finely ground into cocoa powder. Because some cocoa butter remains, each particle is still lightly coated, giving cocoa powder its rich feel and aroma.

Cocoa powder is the most concentrated expression of cocoa itself, carrying much of chocolate’s natural character in a more functional form.
